Genoa salami, capicola, mortadella, provolone, shredded lettuce, tomato, onion, oil and vinegar, and a little oregano. All on a fresh sub roll that we get delivered every morning from Conti's bakery down the street.
People have tried to get me to add things — roasted peppers, sun-dried tomatoes, fancy aioli. And look, those things are fine, but the Italian combo is perfect the way it is. Sometimes the best thing you can do is leave well enough alone.
